View Full Version : Hawaiian Huli Huli chicken

I guess I'll kick off the new recipe forum! :D
The magazine I got it from says they sell this at road side stands in Hawaii, they are really good. Aloha!

1/4 cup pineapple juice
1/4 cup lime juice
1/4 cup dark brown sugar
2 T. ketsup
2 T. soy sauce
1 T. minced garlic
1 T. minced ginger
1 T. evoo
S & P to taste

4 chicken drum sticks ( I made 24 so I had to increase the amounts for mine)

Whisk all ingredients in a bowl
Marinate the legs in a large resealable bag with 1/2 the mixture for 1 hour.
Reduce the rest of the mixture in a saucepan over med-high heat untill thickened, about 5 mins, set aside for basting.

Preheat grill to high. When hot turn off 1 side and put chicken on the unlit side.
Cook chicken to a temp of 170, about 45 mins.
Baste with glaze every 10 minutes and turn after 20 minutes.

Dear lord Patriot, you're gonna make me miss Hawaii already!:(
Seriously, hawaiian food is so darn good out here. My girl makes this teri steak with marinated choice ribeye that's incredible. Gotta have fresh sticky rice, of course! Thanks for the recipe!

Glad that you did the inaugural thread. So glad we have the separate forum now. I know how we're going to cook the pack of chicken legs we have in the freezer. Thanks.

That looks great! Maybe I'll try to make that for the 4th of July!

With a name like that they should have little shredded celery grass skirts on them !
