View Full Version : Pork stew for a cold nite

It was cold last nite so I thought a bowl of hearty stew would do great, I made a ton so its stew for lunch for a few days!!

1.5 lbs of thick cut bacon diced

8 lb pork butt cut into 2" pieces
S & P
1/2 cup flour

1/2 cup white sugar
8 cups beef stock
1 Tbsp thyme 3 bay leaves

2 green peppers chopped
3 onions chopped
5 stalks celery chopped
5 cloves garlic chopped
1 cup white wine

button mushrooms
2 cups carrots chopped
new potatos cut in quarters

In a large saute pan fry up the bacon til nice a golden. remove and save.
reserve bacon grease except 1 Tbsp in pan.

Toss meat chunks with flour and S & P.
Start browning the meat in batches. As the meat gets browned start putting them in a large stockpot.
After all meat is browned add to the stock pot; 1/2 cup sugar, stir, the broth, thyme, bay leaves,carrots and potatos. Stir together cover and simmer on med heat.

In the same saute pan add bacon fat and saute onion, pepper,celery and garlic for about 10 minutes, deglaze with wine and add to stock pot. Add mushrooms.

Keep covered and simmer for 1 hour, eat!

The pork is savory, tender and sweet, It was great!

Get all your stuff ready

Dang that looks good. It's funny, a lot of people forget about a hearty pork stew and tend to go for the beef variety.

I love 'em both but pork stew is great.


Good with friend cornbread cakes too.
