Deviled chicken with veggies. Very easy to make and what tender tasty chicken. I made it a little spicier than the recipe called for!


Chicken pieces, or a whole chicken cut up

any and all kinds of veggies cut up, I used;
carrots
onions
yellow bell peppers
mushrooms
yellow squash
zuccinis
S&P
oregano
tarragon

I had potatos but there was no more room!

dijon mustard - I mixed some country dijon with some Jack Daniels horseradish mustard
S&P
option* crushed red pepper flakes

Brush mustard mixture on the skin side of chicken and put in fridge for at least 1 hour

Meanwhile cut up veggies and put in a baking dish, add S&P, sprinkle some oregano and tarragon on it and toss.

Pre-heat oven to 375

Place chicken on top of veggies, season with S&P and some crushed red pepper flakes and bake uncovered for at least 1 hour or until 180. Take out and tent with foil for 10 minutes and serve.

Does it need any liquid at all in with the veggies or does enough cook out of everything to make it moist...???

Looks really good.

Not at all, plenty of juice when its done. Very juicy and tender.

Nice. I'd really like it with rice. But then, I like everything with rice. :D

Same here.

I'm just not a huge fan of dark meat. I hate it. :cool:
