SLW bought some really thick cut boneless pork chops
that I'm going to make while she goes to a exercise thingy
in a while.

Just got finished making a seafood stuffing for them. Four large
scallops and 8 large shrimp mixed in with some stuffing mix, olive
oil, and a little water and spices.

In the oven at 350 F for maybe an hour and by time she's back
we will eat! :)

In honor of the craptastic snow now sitting on the ground outside I made a big batch of Chili tonight.

We needed inner warmth.

Ate a couple of pieces of left over fried catfish. Sprinkled them with lemon juice and heated in the microwave. Ran out of regular ketchup but found a small bottle of organic. That is so far superior to the regular stuff and it is not watery.

We went to a chinese buffet with my sister and her 4 monkeys. It was amusing watching the 1 year old eat chinese chili peppers :D he LOVED THEM. That and the curry. Kids wierd. :rolleyes:

Rib eye steak, spinach salad with fresh bacon, red onions, mushrooms, feta cheese and balsamic vinegar/oil dressing. Crown and coke... :cool:
