I've made chicken a bunch of ways but this takes the cake for tenderness and lots of flavor! A great weeknight meal.

Moo will like this, I'm cutting back. This recipe has low sodium soy sauce and you have to take the skin off the chicken! :D And yet, it was delicious!

1 - 10 oz bottle low sodium soy sauce
1/3 cup dry sherry
1/2 cup scallions, chopped
2 slices fresh ginger
3 Tbsp brown sugar
2 star anise pods
1 cinnamon stick
1/4 tsp red pepper flakes
4 chicken leg quarters, skin removed(and any fat you can cut out of there)

1st off, I didn't have a cinnamon stick or anise pods. What I had was some chinese 5 spice powder and used that, I guess it worked fine because it was good!

Bring the first 8 ingredients to a boil in a large saute pan over high heat.

Add chicken, cover and reduce heat to medium. Cook for 30 minutes, then turn chicken over; cover and cook for 10 minutes more, or until 180.
Transfer chicken to a plate and tent with foil.

Boil braising liquid, uncovered, until syrupy, about 5 minutes. Strain, spoon off fat and brush on chicken.

Served it with some parsley rice.

sounds good - I'll give you a point for going lite - and another for the uniqueness of the recipe - but the presentation is a bit sloppy. -3 points for sloppy presentation. :p

Gimme a break! There is a habenero and 2 golf balls in that presentation! I say 10! :D

and two grains of stray rice . . . . slopped sauce . . . the chicken is hanging over the edge of the plate . . . . so sad . . . . :p
