View Full Version : Mexican Fiesta Pork!

Viva la fooda!! A pork butt done with a Mexican flavor, made it with some roasted sweet potatos with a honey lime glaze, Ole!

For the mexican rub:
2 Tbsp ground cumin
2 tsp ground coriander
2 tsp salt
1 tsp cinnamon
1 tsp black pepper
1 tsp cayene pepper
1 boston butt

For the braise:
1 pkge banana leaves
1 lb. tomatillos, husks removed, halved.
1 cup onion chopped
2 poblanos, chopped
5 garlic gloves smashed
1 jalapeno, halved and seeded
1/2 cup chicken stock

Combine seasonings in a bowl, rub on all sides of your butt. Sear the butt in 2 Tbsp evoo in a large dutch oven over high heat until browned on all sides.
Remove from pot, pour out fat and wipe clean.

Line the pot with banana leaves, crosswise with the ends hanging over the pot.
Add the veggies and place the butt on top, pour the stock over the meat.
Fold the leave over the meat and cover with a tight fitting lid. Braise in the oven at 325 for 3.5 hours.

Remove meat from pot and preheat broiler to high. Transfer butt to a baking sheet and broil till surface is crisp, about 10 minutes. Let stand for 10 minutes and then rip it apart and eat!

Rub your butt!

Hey Shooter. That looks good, but I don't think I can find banana leaves. Wrong time of year for corn shucks too. :D

Ain't pork good? Truly. I love a good steak. I love chicken. But if I had to limit myself to the fruit of just one animal, would it be anything but the humble suidae?

I do love a hog.
