You guys want a great way to do lamb a little different, try this! Its a caffeinated, Island inspired recipe.
I was doobious, but surprised it was damn tasty and I actually eat lamb alot. Don't get scared!

For the glaze-
Boil:
1/4 cup strong brewed coffee
2 Tbsp molasses
2 Tbsp apple cider vinegar
1 Tbsp dark rum
1 tsp minced garlic
1 tsp instant coffee
1/2 tsp cinnamon ( I bought new cinnamon today!)
1/4 tsp ground allspice
1/4 tsp red pepper flakes

8 lamb rib chops, trimmed
season with S&P

Pre-heat grill pan over high heat, when hot, reduce to medium and wipe with oil.
Boil glaze ingredients in a small skillet, reducing until syrupy, about 3 minutes.

Brush lamb chops with glaze on one side, and grill glazed side down, 4 minutes for medium.
Glaze again, flip and cook the other side for 3 minutes. Let chops rest for 5 minutes and serve.

I picked up a rack of lamb and cut it into chops

You still have real butchers, with their own stores, where you live? I miss that. We have a couple of high-end grocery stores with butchers, but it's not the same. The only butchers around Detroit are specialty-Halal or Kosher. There aren't any Kosher butchers on my side of town.

When I was a kid, my grandma had a butcher right around the corner from her house. He would call her when he got good cuts of meat in, and she would rush right there and buy them for dinner. The only place I get service like that is Nordies, and they don't sell food.
