St. Crab Louis Cucumber Cups

What a tasty little appetizer with just enough heat to make you go back for more! This bald headed, tatooed hick had some high class dinner guests tonite and this was the appetizer. We had a Yacht club investor, a pre-eminent, highly respected zoologist and probably one of the most noted names in the jet ski industry! This should impress some folks!:D cough, loo, cough.


2-3 english cucumbers
1/4 cup mayo
1/4 cup cream cheese
2 T. ketsup
2 t. chili garlic sauce( find it in the oriental section)
1 t. whatsthishere sauce
12 oz. crab meat
1/2 cup bell pepper diced
1/4 cup chopped fresh chives
2 t. lemon zest minced
S & P

For garnish;
grape tomato pieces
strips of lemon zest


Peel cucumbers lengthwise to create stripes, trim the ends and cut crosswise into 3/4 inch pieces. scoopseeds and flesh from centers with a melon baller, to make cups.

Combine all ingredients except crab and mix well. Fold in crabmeat and fill cucumber cups with mixture.
Garnish with tomato and lemon zest. It was served with a bloody mary!
