Spicy and garlicky potatos! A great side dish, especially for spice rubbed grilled chicken!
1/4 cup EVOO
1 Tbsp minced garlic
2 tsp red pepper flakes
1 tsp kosher salt
2 lbs potatos cut into thick slices and wedges
Pre-heat oven to 400
Combine: oil, garlic, pepperflakes and salt in a large bowl, add potatos and toss well to coat.
Spread potatos on a baking sheet in a single layer. Cover with foil and roast for 15 minutes to steam.
Remove foil and continue to cook for 30 minutes stirring twice.
Potatos are always good!
