No grilling tonight, instead I'm going to make some chicken & pesto
ravioli that we got at Costco a few weeks ago, they look pretty good
and I'm going to throw some shrimps in for good measure! :D

Same here it was crappy out so I made some Jambalaya! Its in the recipe forum already! :D I used shrimps too!

Since it's a good friend's 40th tommorrow we're grilling up some Tri-Tip, along with corn on the cob and garlic mashed potatoes.

We had some stinkn' vegetables. :D Dinner was a joint effort. I cut the veggies in and threw them in with the ravoli. They were good, some portobello mushrooms, zucchini, red pepper and red onions.

We also had pork ribs last night, big meaty things. A friend did them on the grill in the morning, then kept them going all day in a very slow oven. We had them with baked beans and corn, and my cole slaw. I also made dessert for a friend's birthday - a homemade triple layer coconut cake with lemon curd between the layers and a homemade frosting, garnished with strawberries.

We had a beef, macaroni medley thingie that was pretty good.. Started with browning the beef in a skillet and then ended up as a casserole.. I didn't cook it, but near as I could tell, that's what DW did to it.. It was tasty with a can or two of Cream of Mushroom soup and celery in it...

Tonight we went to the Canyon Cage in Plaza Frontenac, near the Saks 5th Ave. The food was excellent Southwestern food.

I had a bowl of tortilla soup, SR had calamari, which he said was perfectly cooked, the best he's had in the last 5 years. Then we each had a paella, with shrimp perfectly cooked, mussels and a small lobster tail. Yum!

The manager came over and offered us a dessert. He brought over bunuelos, which I hadn't had since leaving San Antonio. They were perfectly done, served with cinnamon ice cream. We shared the dessert.

We felt kind of guilty, as we had a gift certificate for $25. :o It was amazing food for the price. They ended the meal with a piece of sweet, chilled white chocolate.

Chicken-stuffing casserole...

One lb. chicken breast, one can mushrooms, 1/4 cup butter, 1/2 cup diced celery, 1/2 cup diced onion, 3 cups stuffing, 1/3 cup dried cranberries, 1 1/4 cup Hidden Valley Ranch dressing...

Bake at 350 for 40 minutes... Broil at the end to brown the stuffing....

The last batch was a quarter but the next one will be half. You put your name on a waiting list and we weren't expecting any more for another year but one person backed out. They butcher them less than a year old and the steaks are much better then beef!

I knew a couple in Dinsmore Florida who raised beefalo. I guess that's half buffalo half cow.

Last night was seafood buffet. Today for lunch after detailing a car & visiting the farmer's market, it was local mexican resturant's buffet. Very nice people, they made me feel right at home. God Bless them.

Over at my mom's, I have chili in her crockpot...that will be dinner. I need to stop over there soon. My mom lives one street over. Close, but not too close. :)
