We had some friends come in from Tennessee today and we made some stuff that I had posted before, but that was pre crash, so here it is again! As usual I super sized it and made 8 rolls!
Asian Chicken rolls, with a spicy jelly sauce! Good stuff!
For the rolls:
1/3 cup chopped scallions
6 Tbsp chopped cilantro, divided
1/2 tsp ground ginger
1 lb boneless and skinless chicken brest, cubed
2 Tbsp soy sauce
1 tsp chile garlic paste or sauce
1 egg separated,(save the whites and yellows separate
1/2 can water chestnuts, chopped
1 sheet of puff pastry
1 tsp each of black and white sesame streets.
For the sauce:
1/2 cup red currant jelly
2 Tbsp lime juice
2 Tbsp water
1 Tbsp ketchep
1/4 tsp, red pepperflakes and salt
Pre-heat oven to 400 degrees; line a baking sheet with parchment paper.
add chopped scallions, 3 Tbsp cilantro and the ginger in a food processor, add chicken, soy sauce, chile garlic paste and the egg whites. Put in processor and pulse, transfer to a bowl and fold in the choppedi water chestnuts.
Roll puff pastry on a floured surface to a 14 x 14 square, then halve lenghtwise.
Divide chicken mixture between portions of dough, spreading along the bottom edge of each piece of pastry.
Roll to enclose filling and put on prepared baking sheet, seam side down.
Beat yolk with 1 Tbsp water, brush tops of rolls and sprinkle the sesame seeds on them.
Bake until golden or about 25 minutes, let cool and cut into pieces and serve with sauce!
Sauce:
Simmer all the sauce ingrediants over med heat for 5 minutes, let cool and add the cilantro and serve over roll-ups!
Fun in the kitchen!
