What is everyone eating this fine evening?
I am feasting on roasted tame duck, mashed potatoes with gravy and super sweet corn.

I had to eat in instead of having the traditional BFF lunch because of work today: real tomato soup and a cheese sandwich on homemade sourdough.

For lunch, had lasagna from grocery store deli. ...great home cooking there. Fer supper, it will be a light meal.

We just put some boneless porkchops in the convection oven with a couple of baked taters. The chops are smothered in cream of mushroom soup! :D

That duck sounded good Rock!

I bought one at the grocery store this evening. My mom used to cook me one for my birthday which is next month.

Put it in a Reynolds oven cooking bag for three hours at 325 with whatever spices you like ( I use onion powder and cayenne) it's the easiest way for perfect duck every time!
I don't use the orange sauce that comes with them, it's an acquired taste I guess.

The meat falls off the bone when you use cooking bags.

Thanks. It has been years since I cooked one. I throw the orange sauce away.

The gravy is one of the best parts, duck makes an outstanding brown gravy, I use tapioca flour to thicken it, corn starch works too if you can't find tapioca flour(starch).

What do you do with all of the fat ?

I save the lard and use it like butter in recipes.
