Took down a nice 8 point buck today. Mom helped skin it.

Who said he was driving a truck?....He hit it with his motorcycle, picked up the deer and got back on the bike and drove home...all before dark!

Where's the rack?

It's ALOT easier to skin them if you hang then up by the hind legs. Just cut the skin between the bone and achilles tendon. Hangs perfect.

Bambi burgers really need some fat added. I love deer, but they are a little lean for burgers. Perfect for roast and sausage though.

Speedy, be sure to keep it on ice for at least four days to bleed out. Drain the water and add more ice every day. Once the water runs out nearly clear, it's ready to be processed.

I think that's what my BIL adds. He processes all my deer, except two this year. They were too small to really worry with having processed. I just quartered them and got the backstraps and tenderloins.
