View Full Version : Seared scallops with red curry sauce

This was a fun and tasty quick meal that was very easy to make! I also made some angel hair pasta nests and snow peas, tres cool!

For the sauce, heat:
1 t canola oil
1 T minced lemon grass
2 T red curry paste
1 T minced garlic
1 t minced ginger

Stir in:
2/3 cup coconut milk
2 t brown sugar
1/4 t fishsauce
1 T lime juice

Blanch:
4 oz snow peas, trimmed and sliced
S&P to taste

For the scallop, heat:
1 T oil
10 scallops seasoned with s&p

For the pasta:
Cook as directed


Heat 1 t oil in a saucepan over med heat, Add the lemon grass, curry paste, garlic and ginger; cook until fragrant about 2 minutes.

stir in coconut milk,brown sugar and fish sauce, Bring to a boil and reduce heat and simmer for 3 minutes.
Remove from heat and stir in lime juice and set aside


Blanch snow peas in boiling salted water for 3 minutes and drain and season with s&p and set aside.

For the scallops, heat 1 T oil in a skillet over high heat, add scallops and sear for about 3 minutes per side.

Now eat!:D

Poli, don't bitch! Its not easy to plate delicate things!:D

Looks good! I thought I was the only one other than Asians that used fish sauce.

Just make sure the poli knows what greens should look like!

It wasn't much fish sauce, it has alot of flavor!

When I bring it out my wife asks me if I'm going to start using a liter box too. I have to sneak it in when she is not looking.
