Here you go, SLW. :)

Mini Cherry Cheesecakes (Makes 12)

1 c. vanilla wafer crumbs
3 T. butter, melted
1 pkg. (8 oz.) cream cheese, softened
1 1/2 t. vanilla extract
2 t. lemon juice
1/3 c. sugar
1 egg
1 can (1 lb.) cherry pie filling

In a bowl, combine vanilla wafer crumbs and butter. Press gently onto the bottom of 12 paper-lined muffin cups. In a bowl, combine cream cheese, vanilla extract, lemon juice, sugar, and egg; beat until smooth. Spoon into crusts. Bake at 375 degrees for 12-15 minutes or until set. Cool completely.

Spoon cherry pie filling over cheesecakes. Chill for 2 hours.

Their cherry topping is a little more complicated. The commentors recommended the cherry pie filling as an alternative. It worked out great and tastes delicious!!

Thanks, it sounds wonderful. I think I'll make them for a pot luck lunch for volunteers at the Selby Gardens in Sarasota. It would be perfect to take there.

They came out great a second time too! I also made Chocolate Mayo Cake with Brown Sugar Frosting. That's what you see right next to the cheesecakes. Yum-o!

They came out great a second time too!Your recipe yields 12 but I only count 11 cheesecakes.

I always get made fun of when I bring out the "Chinet"! :D

But I agree with you, no washing especially when there is a crowd!

I could have busted out the plain ol' white Costco cardboard plates. At least I got some purty ones for guests.

Jen, have you posted the recipe of the choco-mayo cake anywhere?

I'm busy trying to figure out how to adapt the mini cherry cheesecakes to a Cinco de Mayo theme. I noticed that the volunteer party at the botanical garden suggested a Cinco de Mayo theme to the potluck stuff we bring. Duh, guess that's right when the party is May 5th. :D

Thanks, it's too late for Cinco de Mayo, but not too late to make some delicious little cheesecakes. I got off easy at that potluck. It turns out that with my last initial, all I had to bring was drinks. I brought 4 V-8 cans and 4 Dr Peppers. (We were supposed to bring enough for 6-8 people). They went quickly.
