Easy Chicken in Wine Sauce

Serves 2

Ingredients
2 tablespoons extra-virgin olive oil
1/2 clove garlic, crushed
1 1/2 boneless, skinless chicken breast halves, cut into strips
dash salt
1⁄8 teaspoon coarsely ground black pepper
1⁄4 cup dry white wine
1 1/2 medium tomatoes, sliced

Instructions
In a medium skillet, heat the oil and garlic over medium heat. Sprinkle the chicken with the salt and pepper, then add to the skillet and cook for 7–10 minutes. Add the white wine and cook for an additional 2 minutes.
Remove the chicken to a platter. Sauté the tomatoes in the skillet until tender. Place the tomatoes over the chicken and cover with the pan drippings.
Nutritional Information:
190 calories
15 total fat (2 g sat)
12 mg cholesterol
5 g carbohydrate
6 g protein
1 g fiber
117 mg sodium

Unrelated to your recipe, you do have a George Forman grill, don't you?

Normally I would avoid such a fad item, but next to my "Rice Cooker And More" ($17.94) and my ancient cuisinart ($can't remember) I love my Forman Grill ($40) best.

The Forman grill was made for boneless chicken breasts, but it also makes commercial crab cakes come up crisp like fried, without the oil.

The Forman grill was made for boneless chicken breasts, but it also makes commercial crab cakes come up crisp like fried, without the oil.

Don't have a Forman grill, might look into it after the surgery. Does it make the chicken breasts come out juicy? I hate tough chicken, particularly now, when I've had this oral surgery. I'm getting a bit tired of all that jello. :D
