View Full Version : Herbed Beef in a salt crust

Made this kick ass roast during the Gator win Saturday night! A little bit of work and you have a roast beef like you never had before. I just wish I took it out 5 minutes sooner, more bloody!!
A little variation from the original recipe, I am calling it - Injected, marinated, studded, salt encrusted roast beef!!

9 Lb. sirloin tip roast beef.

Inject with;
store bought cajun butter

For the marinade;

1/2 cup EVOO
1/4 cup minced onion
1 Tbsp garlic powder
1 tsp basil
1/2 tsp marjoram
1/2 tsp thyme
1/4 tsp black pepper

For studding; 3 cloves garlic, slivered

For the crust;

3-5 lbs of kosher salt
1.5 - 2 cups water

Marinade the roast for at least an hour or up to overnite.
Pre heat oven to 350

inject roast with cajun butter
Stud with garlic slivers, I use a oyster shucker to make my incisions, just push and slide the garlic slivers right in.

Make a paste of the water and salt. Line a roasting pan with tin foil and put a layer of salt down.
Place roast on the pan and pack the remaining salt around and seal well.

Bake until 130, thats when I took this one out. Thats when you get to break the salt crust with a hammer!.

Time to slice and hope you get a slice with some garlic in it!

Thats the funny part, not salty at all. The salt crust justs does some good stuff to cook the meat. I've don it with fish before too! Its fun food!

Next time try stuffing it with about two dozen raw oysters all around with the cajin butter !

I've done it with a whole roast chicken. Wonderful.
