Surprisingly Good "Impossible" Pie.
Those of you who cook on a budget are familiar with the various "impossible pies". Most of them ore okay for kid but not so much for adults.
I made a good one tonight.
1 diced red bell pepper (not too finely diced)
6 green onions trimmed and finely sliced
1 cup of grated mozzarella cheese
1 cup of baking mix
1 cup of milk
1 cup of ricotta cheese
4 - 5 eggs (depending on size)
salt, pepper, seasonings to taste
Spray a glass pie plate with cooking spray and heat the oven to 400 F
Scatter the diced/sliced pepper and onion mix on the bottom of the plate.
Whisk (mix/stir) the eggs, baking mix, milk, and cheeses in a bowl. Add your seasonings. Blend until it's fairly smooth but not completely lump-less.
Pour the mixture over the veggies and bake for about 35 - 40 minutes. Let rest for 10 minutes.
You get a nice result that is good both for a dinner or a room temperature lunch. Despite the baking mix, it's also a lower carb dish for those who care about this sort of thing. I was pleasantly surprised by the toothsome result.
