Man I love chicken Parmesan! I think its healthy.:biggrin-new: made it with spaghetti.
Marinara sauce, in a pinch you can use bottled stuff or just saute some onion, green pepper garlic; add crushed tomato,basi,oregano and some parsley and S&P and let cook down for an hour.
3 chicken breasts; trim of fat and pound down to about 1/4" thick
You want to bread and fry them so; In one bowl stir up 3 eggs with s&p - another plate take bread crumbs, parmesan cheese S&P and some parsley and mix.
Get a pan hot with some veg oil, dredge the cutlets in the egg and then the breadcrumbs and cook each one till nice and brown. Place on plate with paper towels to soak up oil.
Pre heat oven to 350.
Take a glass baking dish big enough to hold the chicken and ladle some sauce on the bottom and place the cutlets on top. Ladle more sauce on the chicken then put mozzarella cheese on top and sprinkle more parmesan cheese on top. Bake for about 15 -20 minutes till cheese is melted and bubbly.
Serve over pasta and enjoy!!!

That's pretty much how I make it. Sometimes, I'll slice, bread and sautee slices of eggplant to put on top of the chicken.
