Italian Wedding day soup - souped up!
I was boiling a couple of chickens to make Atrains food and decided I was getting tired of chicken soup. So I figured to do everything the same to make the stock but instead of chicken I would make mini meatballs! The stock is like this -http://www.conservativeunderground.c...e-chicken-soup
I used the regular veggies for chicken soup and added meatballs and spinach and made pasta stars.
1 onion grated
1/4 cup parsley
2 tsp minced garlic
2 tsp kosher salt
2 slices of white bread crust removed and torn into small pieces
1 cup parmesan grated cheese
1 lb lean ground beef
1 lb ground pork
fresh ground pepper
Pre made chicken stock
2 onions diced
1 green bell pepper diced
some celery and carrots diced
1 pack frozen shredded spinach
Blend all the ingredients in a large bowl, mix it up good, if its still a little wet add some breadcrumbs
Scoop out a little less than a tablespoon of meat mixture and roll into little balls.
I put the fresh veggies (for the chicken soup) Diced onion, green pepper, carrots and celery into the simmering broth, cook for 45 minutes.
Add the meatballs to the simmering soup.
When they start to float add the spinach and cook for about 10 more minutes and then eat up!
