I guess I'll kick off the new recipe forum! :D
The magazine I got it from says they sell this at road side stands in Hawaii, they are really good. Aloha!
1/4 cup pineapple juice
1/4 cup lime juice
1/4 cup dark brown sugar
2 T. ketsup
2 T. soy sauce
1 T. minced garlic
1 T. minced ginger
1 T. evoo
S & P to taste
4 chicken drum sticks ( I made 24 so I had to increase the amounts for mine)
Whisk all ingredients in a bowl
Marinate the legs in a large resealable bag with 1/2 the mixture for 1 hour.
Reduce the rest of the mixture in a saucepan over med-high heat untill thickened, about 5 mins, set aside for basting.
Preheat grill to high. When hot turn off 1 side and put chicken on the unlit side.
Cook chicken to a temp of 170, about 45 mins.
Baste with glaze every 10 minutes and turn after 20 minutes.
Grilled and looking good!
And eat with a potato salad and a garden salad.
