13 Breathtaking Effects of Cutting Back on Meat
Water used for farmed animals and irrigating feed crops: 240 trillion gallons per year -- 7.5 million gallons per second (that's enough for every human to take 8 showers a day, or as much as is used by Europe, Africa, and South America combined). According to the UN: "he water used by the sector exceeds 8 percent of the global human water use." As just one example, "n average 990 litres of water are required to produce one litre of milk." So drinking milk instead of tap water requires almost 1,000 times as much water.
An American saves more global warming pollution by going vegan than by switching their car to a hybrid Prius.
Some of the comments on this post are pretty funny.

I was banned for messing with the Zombie-Americans, aka vegans.
I brought up something about how I've never met a vegan that wasn't an upper middle class white person, which in itself is the bane of DU. I was banned on my one year anniversary of signing up.

The first law of physics is matter can neither be created nor destroyed. The water used does not just disappear. It sinks into the soil - replenishing the aquifer, it finds it's way into streams, it evaporates or it is incorporated into the crops themselves and then "recycled" as it is digested. Going vegan will simply replace that irrigation used for feed crops with water used for crops destined for human consumption.
The OP also ignores that a very large portion of our beef etc comes from countries that feed their livestock exclusively on sawgrass etc.
The livestock convert an inedible substance into something edible without one bit of irrigated water or the like. In cases like this the beef is a net gain so far as food is concerned.
Besides, this is America and we are a FREE people. Jerks like the one in the OP would FORCE his "solution" on the rest of us.

One of the MANY joys I gain from eating meat is the knowledge that by doing so, I'm pissing off the pretentious, in- your- face vegan jerks from DU and Peta, imagining their self- righteous rage as I enjoy a bite of pork loin (My dinner Saturday night), steak (My dinner last night), and even KFC chicken (Lunch today) and a Burger King cheeseburger (Dinner tonight).
