    This is not your typical roast beef, Its the best I have ever had! We have a food place near me called Feltons and they will sell you whole slabs of beef. They had a whole 17 lb slab of N.Y. strip steak on sale for $4.49 a lb!. There is a lotta trimming to do and you will lose a few pounds of fat and gristle. I cut us 6 nice sized steaks to freeze and made the roast out of the rest!

    Slow roasted N.Y. strip with garlic rosemary crust.

    pre-heat oven to 450 with rack on bottom

    Combine:
    3 T. ground dried rosemary
    3 T. soy sauce
    2 T. fresh ground black pepper
    1 T. granulated garlic
    1/2 t. kosher salt
    1 t. red pepper flakes
    1 egg white
    Mix well to form a paste.

    Take trimmed roast and coat with 3 T. of evoo, then rub the paste on top and sides.
    Place roast on a rack on a baking sheet and roast at 450 for 15 minutes. Lower temperature to 250 and slow cook till temp hits 130 about 2 hours but check after an hour or so.
    Remove from oven and let rest for 30 minutes before carving.

    This is after trimming and cutting off 6 steaks!


    Rubbed and ready to go!

    That looks perfectly cooked....Gotta try this recipe as it looks pretty simple to make...But I'd do it on a prime rib roast instead as it's my favorite cut of beef.

    I would use those tomatoes up, they are starting to look pretty ripe. :)

    Yeah, prime rib is the bomb, but this was only $4.49 a pound. Plus I have some steaks left to grill! :D

    That looks great. I need to go back to my local grocer who had prime NY strips steaks on sale for $10.99.

    That is a good price. I was at Piggly Wiggly this weekend and they had whole beef tenderloin for $6.99lb. They even cut it into steaks for me and ground the scraps into hamburger. I bought two of them.:D

    I love Piggly Wiggly. Great meat market. We'll be at Edisto in a couple of weeks and there is a small...and I mean small, Piggly Wiggly at Edisto Beach but it is absolutely wonderful. Great fried chicken in the deli.
