All I can say is - I'm stuffed!!
2- 10 oz bags of spinach
1 lb potatos peeled
1.5 cups shredded sharp cheddar
5 slices bacon, diced
1 flank steak, pounded thin
1/2 cup bbq sauce
1/2 tsp red pepper flakes
olive oil
S & P
Pre-heat oven to 400
Cook: spinach in a little olive oil, drain well, season with S & P and red pepper flakes. Set aside.
Cook: diced bacon until crispy, set aside
Boil: potatos until tender about 15 minutes, drain well and return to pot and dry out over med. heat.
Off heat mash potatos into small chunks, then stir in the cheese, bacon and S & P.
Lay pounded steak on cutting board and season with S & P. Layer with the spinach then the potato mixture, roll into a log and tie with string. Season with S & P.
In a pan that can go into the oven sear the roll-up on all sides to brown, end up with seam side down.
Brush roll-up with bbq sauce and put pan in oven. Roast for about 30 minutes or until about 140 degrees for medium-rare.
When done remove from pan and tent with foil and let it rest for 10 minutes, slice and Mangia!!!
