  1. #1 Italian Garlic Shrimp with tomatoes

    This is very simple and really healthy. Should feed four

    1/2 to 1 lb fresh peeled Shrimp - Medium work best
    2 lbs Roma Tomatoes sliced (about 8 -10)
    Box of Spaghetti - boil according to directions (we like wheat)
    1 Tablespoon Garlic salt or whatever garlic tolerance you have
    2 Tablespoons Olive oil
    2 cloves of minced garlic

    Heat Olive oil at medium heat and saute garlic cloves until fragrant. Add sliced Roma tomatoes and 1/2 tablespoon of garlic salt - continue cooking covered on simmering for 15 minutes.
    Add Shrimp and the last 1/2 tablespoon of garlic salt and cook shrimp through.
    Pour over spaghetti and add your favorite Italian style cheese (Parmesan, Romano)

    Get a bottle of Milton Park Shiraz and enjoy. Or a good Italian red.

    It's very garlicy.....I've seen this where you add Italian seasonings (oregano etc) to it, but we like it simple with the garlic ....but certainly experiment.
