  1. #1 Summer Salad-Jersey Style

    Here's a recipe for a good summer salad:


    1 medium Vadalia or red onion chopped or halved then sliced(your choice)

    2 large Jersey tomatoes chopped

    4 Kirby pickles or 1 large cucumber peeled and chopped or sliced(your choice)

    Extra virgin olive oil

    Balsamic or red wine vinegar(again, your choice)

    Fresh basil

    Salt & Pepper

    In a large bowl, chop your onion and put into the bowl. Then cut your tomatoes in half vertically, then cut each half into about 1/2" wide slices(you can cut the pieces in half if you choose to make them more bite size). Put those in the bowl. Then peel your pickles(I use these over a regular cucumber because of their crunchiness) and slice them in about 1/4" slices or whatever you prefer and place them in the bowl. Then take 3 or 4 large basil leaves and slice them into ribbons and put them in then take your salt, pepper, oil, and vinegar, to your tastes and mix everything up and mangia. This in itself can make a nice lunch. Great on a hot day. Hopefully you're privy to Jersey tomatoes for this one.
