Smokey Bacon Black Bean Patties
Crispy Pan fried and about the size of hamburgers with a great smokey flavor .
Make a lot and freeze them for later .

1 16 oz can black beans
or use the home made beans below.
1 clove garlic,
1 medium onion (chopped),
1 bell pepper (chopped)
2 teaspoons mesquite or hickory-flavored liquid smoke
1 can of corn kernels, drained
several splashes of vinegar
several splashes of hot sauce
2 or 3 tblspns of tomato paste
1 teaspoon lemon juice
3 tablespoons of flour,
salt and pepper to taste
sauteed together until soft .
Sautee the ingredients together until soft .
Let the mixture chill in the box for about 20 minutes.
Mash beans in a bowl until they are well mixed.
Add the lemon juice and hot sauce, salt and pepper.
Add the tomato paste and the flour and continue to mix.
Form balls into hamberg sized patty shape.
Heat your pan on high heat and spray with cooking spray .
Dust with flour and Cook on each side until golden brown and crispy.

Smokey Black Beans
1 pound dry black beans, soaked overnight
4 slices of bacon
1 onion, chopped
2 teaspoons mesquite or hickory-flavored liquid smoke
2 tablespoons dark molasses
1/2 cup packed brown sugar
2 sliced jalapeno peppers
Drain the black beans from their soaking water and place in a slow cooker.
Fill with enough fresh water to cover them. Cover and set to High.
Cook the bacon in a skillet add with drippings
to the pot.
Add onions; cook and stir until tender.
Stir this into the beans along with the brown sugar, liquid smoke, molasses and jalapeno slices.
Stir to blend, then cover and cook on High for 5 to 6 hours, or until beans are tender.
