Linda, sorry I wasn't around yesterday but you did get me thinking way too much for beef ribs!! As usual my butcher came through with a great rack of beef ribs! It was overcast all day but no rain and these ribs stayed on the grill for 5 hours!
1 rack of beef ribs
your favorite rub - I used the kick ass smokey mesquite that SR and SLW brought me!
soaked wood blocks for the smoke.
Heat grill to about 250-275
On the bone side of the ribs remove the thin skin, its a pain but you have to do it!
Rub both sides of the ribs with your dry rub.
Put a water pan with 2 cups water, a cut up onion and some garlic in it on the unlit burner of your grill.
On the lit side put your soaked wood in tin foil.
Put ribs on unlit side and slow cook for 3 hours, wrap in tin foil and put back on for 2 more hours.
A beautiful beef rack!
Get rid of this stuff!
