seasoning - I used a mix of Everglades heat, cajun seasoning and flavor foundations seafood blend.
nice crusty Italian bread
Brush the filets with evoo both sides, liberally sprinkle seasonings and S&P on both sides and let sit in fridge.
Heat grill to hot, then lower flame to medium. Place filets on hot grill and cook for 5 minutes, flip filets carefully and cook for 4 minutes more. While flipping place bread on grill to brown up.
Take in house and assemble sandwich! Lather both sides of bread with tartar sauce, add lettuce,tomatos and top with filets!
