CHICKEN OR BONELESS PORK MOLE
If You have never tasted the richness of dark mole
gravy you are in for a treat !
1 c. flour
1/2 c. oil
4 tblspns chili powder
2 cans chicken broth
1 large envelope chili mix
2 cloves of crushed, chopped garlic
1 block Mexican chocolate
6-8 chicken breast halves, boneless and skinless
or 6-8 thick boneless center cut pork tenderloin chops
Fry the flour in the 1/2 cup oil. Add the chili powder and garlic and cook slowly for 1 minute. Add the chicken broth, chili mix and chocolate. Add chicken breasts or pork filets and simmer for 45 minutes over medium to low heat. 4 servings.
This can be used as an excellent enchilada sauce. Just omit the chocolate and chicken and use the sauce in your favorite recipe
