I sounds like you have planned properly. The seasonings sound perfect. I LOVE using olive oil with garlic and a sprinkling of parmesan.

The veggies were last night with the filet mignon. Tonight I made something else. I think you'll see them in the pics SR's is posting. I cooked a cup of instant brown rice, let it cool, mixed it with some light Italian dressing and fresh scallions, oregano and basil leaves from my little herb garden. I added some sun dried tomatoes, cut up a fresh tomato, added little cubes of mozzarella, parmesan and a couple other Italian cheeses (good old Kraft Italian crumbles in a bag), along with small cubes of an extra lean salami. It tastes like Lebanon bologna, if you've ever had it. I added a dash of pesto seasoning and garlic to the mix. I refrigerated it for a couple of hours. It was yummy, if I do say so. :D
