This is good as an appetizer or a meal. I used sweet Italian sausage and polish sausage but you could use andouille or hot Italian sausage if you like it hotter or just add some jalepenos to the salsa!
This is going as part of the food I'm cooking for a combined birthday for my son, daughter and brother, they are all within 8 days of each other. Different years. Thats why the big pile of sausage!
Salsa, I used Pace, medium and mild
button mushrooms cut in half
This is all you really need, I added some onion, bell peppers and diced tomatos.
Put the salsa in a pot and get it simmering.
If you want to add, dice up some onion and peppers and add to salsa. Add diced tomatos.
Brown the sausage for about 5 or 6 minutes per side, you are only cooking it half way, it cooks the rest of the way in the sauce.
Slice the browned sausage into 1/2" pieces and add to the pot.
Simmer for 1 1/2 hours, stirring occasionally.
Serve with some Italian bread and whatever topping you like, or over rice or noodles.
