#1 1 pot meal - pork chops

I like doing this recipe with fish filets also. If you do it with fish just season them and put them in the pan at the same time as the rice and the fish will be done when the rice is done.
1 white onion sliced
1 red, yellow and green pepper sliced
2 Tbs minced garlic
1 pack baby portobello mushrooms sliced
1 cup rice
1.5 cups chicken broth
center cut pork chops
Season chops with S & P and brown 4-5 minutes on each side and reserve.
Sweat onion and peppers for about 7-8 mins till soft and add garlic. Cook for 1 minute.
add broth, rice, mushrooms and get it all stirred up
Bring to a boil, then lower to a simmer, cover and cook for 10 minutes.
Add choprs back in the pan on top of the veggies and cook till rice is done, 10 more minutes
A great 1 pot meal!

If you keep eating this well you are going to need Reinforced Floor Joists !:D
