Only for the brave! I've been experimenting with seasonings for my signature Bloody mary mix and when I concocted this it turned out to be a killer rub/seasoning for food.... if you like HOT!! :D But flavorfull!
This makes almost 2 cups of, better than BAM!
2/3 cups of kosher salt
3 Tbsp black pepper corns
2 Tbsp minced garlic
2 Tbsp minced onion
1/2 Tbsp nutmeg
2 Tbsp parsley flakes
1 bay leaf
1 Tbsp yellow mustard seeds
1/2 tsp ground coriander
4 Tbsp African bird pepper ( if you can't find that, cayene will do)
2 Tbsp chile powder
Put it all in a spice or coffee grinder on fine and grind away!!
I'll be using it on some Buffalo chicken quarters tonite! Already rubbed and in the fridge marinating!
Whoa! tres hot! Made a sauce of butter, crystals, garlic, onion, S&P, dried hot mexican peppers and some buttermilk ranch dressing.
Baked the spiced chicken at 425 for 50 minutes, 25 mins per side.
