    Tomorrow I am making

    Pork Ribs,the big thick ones.
    Collard greens with ham hocks,
    corn bread,
    baked beans (from scratch),
    fresh tomato salad
    flan for dessert.

    I haven't started the flan yet. I think I am going to put orange in the sauce and put some passion fruit flavored mezacal in the flan with a touch of chocolate. Depends on how the family votes for flan flavors when I start it.


    Oh and one cajun martini for me!


    My son is still home and doesn't leave for college for two weeks. He loves southern food, esp greens.

    A cajun martini is my adaption of something I had at K Paul's 24 years ago. I pour in a capful of dry vermouth, run it around the inside of the glass and pour out whatever doesn't cling to the sides and add chilled vodka. I use Vodka now not gin, but either would work. Then I add a little of the juice from pepperocini's, think dirty martini. A very small dust over the top of the drink with a mix of cajun spices. Don't add too much. Spices are oily and won't disolve and just float on top, a VERY small dust. I often mix up Emeril's spice mix from his first cook book and leave a jar of it around so I use that. Garnish with a pickled okra.

    Drink
    Rinse Glass
    Repeat.

    Dang! now I keep thinking about oysters. I wonder if I can get some nice fresh one somewhere today.

    Bland rice, corn dog, fatty bbq wings, and chicken salad sandwhich. Oh yeah...
    In most sports, cold-cocking an opposing player repeatedly in the face with a series of gigantic Slovakian uppercuts would get you a multi-game suspension without pay.

    In hockey, it means you have to sit in the penalty box for five minutes.
