SR! You gotta try this!
Sausage cheese pie!
3 lbs Italian sweet sausage
3 lbs ricotta cheese
7 eggs
8 Tbsp grated parmesan cheese
1 lb grated mozzarella cheese
1/3 fresh parsley chopped
(I added , 1 green pepper + onion chopped and sweated)
Pre-heat oven to 350
2 pre made pie dough pans and 2 sheets phyllo dough
Skin sausage and slice lengthwise and cut in half, cook till no longer pink in a sautee pan, about 20 minutes.
Take out of pan and place in a colander and rinse with water to remove excess grease. Drain well and cool.
Cut into bite sized pieces.
(If using) Sweat pepper and onions for about 5 minutes untill just soft, place on paper towels to dry, let cool.
In a large bowl, mix ricotta with eggs untill well blended. Add grated parmesan, mozzarella and parsley. Add cooked sausage and veggies(if using) and mix well.
Thaw and roll out the phyllo dough. Fill pies to very high level and top with phyllo dough, Cut off excess dough around sides and mahe a few knife slits on the top. Brush with a mixture od eggwash and bake for 1 hour or untill golden brown. If edges of pie start to brown too fast, wrap tin foil around the edges.
I ate it right out of the oven but this pie is best cold!! I had it for breakfast and lunch today!!!

You could adapt it and use lower fat ricotta (which isn't heavy just regular). Then use a lower fat mozzarella and get a good Italian sausage. Some of the stuff actually is pretty lean. The key is to not eat the whole pie at one sitting.
I'll have to try it for SR. Thanks for the recipe. I know my version won't be as good. Wonder if it would be good with maybe some peppers thrown in. I've been getting these medium spicy green peppers at Yoder's fresh market. They're supposed to be for Mexican food, sort of a mild chipolte, but they have a wonder smoky taste.
