Wherever there is deer hunting, there are deer processors. I don't know about your state, but mine licenses them through the county Health Departments and tbey are routinely inspected to ensure that they keep their equipment clean and all.
A good portion of them are processed at home in Oklahoma, also we have a much warmer climate than you have in Michigan or Ginger has in Colorado. I remember when I lived in Minnesota dressing deer was easy in the nice cool fly free late fall.
