I like spinach quiche and I do frittattas every now and then, which is an italian style omelet. If I have left over ham and cheeses that are sitting around...I chop them up along with onions and whatever frozen veggies I have and make a frittata. I also add parmiggiano cheese to the eggs to make them extra tasty.
