    Super easy, super fast and dang tasty!:D
    Started getting Christmas dinner sorted out and started cooking tonite and I had pork chops defrosted, this was a fast way to do them without the mess and grease of frying!

    It also freed up burners on the stove to boil pigskins and a pot for bubbling sauce!

    pork chops ( I had center cut and took the bone out)
    2 tablespoons butter, melted
    1 egg, beaten
    2 tablespoons water
    1/4 teaspoon pepper
    1 cup herb seasoned stuffing mix or 1 cup herbed breadcrumbs (I used panko)

    Trim the fat from the meat.
    2 Pour butter into a 13x9x2 inch baking pan.
    3 Combine eggs, water, and pepper.
    4 Dip the pork chops into the egg mixture.
    5 Coat with stuffing mix or bread crumbs.
    6 Place pork chops in the pan.
    7 Bake in a 425 degree oven for 10 minutes. Turn chops. Bake about 10 minutes more or till no pink remains and juices run clear.
    ( mine took a little longer, go for 160 on the meat thermometer)



    Served with Green Giant green beans!

    Patriot those pig skins look familiar. I usually throw them in the pot when I'm making Sunday sauce. My mother rolls them with a breadcrumb stuffing, sort of like a log then sliced, YUMMY...must be eaten the same day. They don't do well in the microwave.

    I have tried them stuffed and didn;t care for them. I use a separate sauce for them also. They will heat up just fine in the tray with the sauce.

    Most people if they aren't Italian or brave are ascaird of them!!! :D

    You'd like my mother's stuffed cutine. and people who have never tried them, don't know what they are missing. Which is good, this way it stays cheap for those of us that do.

    I recall a time that oxtails were dirt cheap, something only jamaicaans ate. Then the news got out and everyone started making them, and the price increased significantly on them.

    You got that right! I love oxtails but they are priced like filet mignons right now! Same thing with lamb shanks, used to be throw away meat and now they are outa site priceways.
