Hey SR! Don't let SLW catch you looking at this! There is alot of stuff in here but bacon rules!
1 lb bacon
2 T minced fresh thyme
2 lbs yukon gold potatos sliced thin
3/4 cup gruyere cheese
1 1/2 cup cooked shredded chicken
1 cup sliced leeks
1 T mnced garlic
Pre heat oven to 450
Take an oven safe pan or cast iron skillet and line it with bacon slices with 1/3 of bacon hanging off the pan.
Layer potatos over the bacon covering the whole surface and sprinkle with thyme.
I like the word sprinkle.
Sprinkle 1/4 cup gruyere cheese over potatos.
Season with S&P.
Repeat layering with chicken, 1/4 cup gruyere, leeks and garlic then remaining potato slices, S&P and remaining cheese.
Fold hanging pieces of bacon to the center, if they overlap cut them and lay them where there is no bacon, cover that booger up!
Put on stove top on medium heat for 10 minutes.
Cover with foil and transfer to oven for 30 minutes, take foil off and cook for 30 more minutes until bacon crisps up.
Let rest for 10 minutes, drain and eat like a pig!
