#1 Seared scallops with red curry sauce03-06-2011, 11:45 PM
This was a fun and tasty quick meal that was very easy to make! I also made some angel hair pasta nests and snow peas, tres cool!
For the sauce, heat:
1 t canola oil
1 T minced lemon grass
2 T red curry paste
1 T minced garlic
1 t minced ginger
2/3 cup coconut milk
2 t brown sugar
1/4 t fishsauce
1 T lime juice
4 oz snow peas, trimmed and sliced
S&P to taste
For the scallop, heat:
1 T oil
10 scallops seasoned with s&p
For the pasta:
Cook as directed
Heat 1 t oil in a saucepan over med heat, Add the lemon grass, curry paste, garlic and ginger; cook until fragrant about 2 minutes.
stir in coconut milk,brown sugar and fish sauce, Bring to a boil and reduce heat and simmer for 3 minutes.
Remove from heat and stir in lime juice and set aside
Blanch snow peas in boiling salted water for 3 minutes and drain and season with s&p and set aside.
For the scallops, heat 1 T oil in a skillet over high heat, add scallops and sear for about 3 minutes per side.

Looks good! I thought I was the only one other than Asians that used fish sauce.The difference between pigs and people is that when they tell you you're cured it isn't a good thing.
