    That's a mighty fine sandwich.

    Two things though:

    1) I wouldn't smash it down as heavily as they suggest.

    2) There's no way I could let that bad boy sit overnight. Unless it's midnight and I also just had dinner. :D

    You want it cohesive - the smashing is necessary. People are over cautious about food temps in situations like this one. It's all cooked. The bacteria growth in a home running 60 to 65 F is not going to be crazy in 12 hours in a dish like that.

    Remember, until recently all of our ancestors routinely left cooked meat out overnight. You hang your darned deer and pheasants, don't you? ;)

    To flatten it out that much would take at least fifty pound of weight .Two rib eye steaks and a round crusty loaf of bread !

    What I meant was, I could not go to sleep knowing that sandwich existed in my house. It would need to be eaten right away. :p

    And the only food I ever see hanging is when I walk into the butcher's shop.
