Mini Cherry Cheesecakes (Makes 12)
1 c. vanilla wafer crumbs
3 T. butter, melted
1 pkg. (8 oz.) cream cheese, softened
1 1/2 t. vanilla extract
2 t. lemon juice
1/3 c. sugar
1 can (1 lb.) cherry pie filling
In a bowl, combine vanilla wafer crumbs and butter. Press gently onto the bottom of 12 paper-lined muffin cups. In a bowl, combine cream cheese, vanilla extract, lemon juice, sugar, and egg; beat until smooth. Spoon into crusts. Bake at 375 degrees for 12-15 minutes or until set. Cool completely.
Spoon cherry pie filling over cheesecakes. Chill for 2 hours.

Their cherry topping is a little more complicated. The commentors recommended the cherry pie filling as an alternative. It worked out great and tastes delicious!!
