Chocolate Mayo Cake with Brown Sugar Frosting
2 c. all-purpose flour
1 c. sugar
3 T. baking cocoa
2 t. baking soda
1 c. water
1 c. mayo
1 t. vanilla
1/4 c. butter or margarine
1/2 c. packed brown sugar
2 T. milk
1 3/4 c. confectioners' sugar
In a large bowl, combine flour, sugar, cocoa, and baking soda. Add water, mayo, and vanilla. Beat at medium speed until thoroughly combined. Pour into a greased 9" square or 11"x7"x2" baking dish. Bake at 350 degrees 30-35 minutes or until cake tests done. Cool completely.
For frosting, melt butter in a saucepan. Stir in brown sugar, cook and stir until bubbly. Remove from heat and stir in milk. Gradually add confectioners' sugar. Beat by hand until frosting is of spreading consistency. Immediately frost cake.

Sounds delicious. Can you use cocoa powder? I wasn't sure about the "baking cocoa powder."
