I usually watch some of the opening ceremonies, but that's all.
I wait with anticipation for the endless nights of gymnastics. You know, the event that NBC seems to think is the only Olympic event worth televising? Personally, I like watching the off events like table tennis, badminton, shooting, archery, rowing, team handball(sucks we don't have a team and the sport is pretty bad ass) while I wait for baseball and basketball.
I'll probably watch the opening ceremonies. I also like to watch the swimming, because it inspires me to do better. The bridge they keep showing on the news looks cool with the Olympic rings hanging between it's towers.
The whole dream team thing has spoiled most of the team sports for me. I think it was better when the US teams were all amatuers.
Kids still love the Olympics, especially girls. It's one venue in which women's sports gets the same coverage as men's sports (other than pro tennis), so my nieces love to watch.

I will be flipping back and forth from WWE to the Olympics opening ceremonies.
That's a surprise, we have had a memorial to those killed in the London tube bombings of 2005 followed by a rather nice rendition of Abide With Me. That'll get the militant atheists hot and bothered.
Bijou can correct me if I'm mistaken, but think that's the proverbial London Bridge. The Tower of London is nearby. I usually strongly dislike the Today Show, but have been watching it off and on this week just for the pre-Olympic blather.
My least favorite is the gymnastics, because the judging is so subjective. I enjoy watching the young gymnasts perform, but hate that judging. It reminds me of dog show judging.
I bet your nieces will be glued to the screen watching it. Need to run and get dinner ready before it's on.
