I had alot of stuff in the fridge and pantry that cried to be cooked mexican style! You can add what you want of course and I wish I had some Jalapenos but it was spicy enough!
2 cans rotel with peppers
1lb chorizo -I had an extra hot kinda chorizo!!!
1 hot country sausage diced
1 cup rice
2 cups chicken broth
8 oz sour cream
1 tsp cayene pepper
1 tsp tumeric
1 cup diced onion
6 cloves garlic smashed and minced
Cheese alot of cheese, whatever you got! I had some fresh mozzerella,shredded mozzerella, shredded parmesan and shredded provolone (none are mexican)
Pre heat oven to 350
Make the rice according to the directions with the broth
In a large skillet that can go in the oven heat the chorizo and sausage about 10 minutes.
Add the onion and garlic and cook till soft.
Add the cooked rice, rotels, cayene, tumeric and sour cream and mix well.
Top with all your cheeses and bake in oven for 30 minutes then broil for ten minutes to get the cheese brown and bubbly! I had it on a tortilla!

Mix ingredients well and add cheeses
Out of the oven
