Oh man , talk about juicy, tender and freakin delicious, this is it!
Very easy and you can add or change the ingredients in the gremolata.
Pre heat oven to 450
In a bowl mix 1/4 cup EVOO with some minced garlic, parsley, oregano, thyme, sage and S&P, mix well
1 - 3 lb pork loin roast
Roasting pan with rack
Rub gremolata mix all over the roast, place in pan skin side up and roast at 450 for 10 minutes.
Turn heat down to 250 and roast for 1 to 1.5 hours to a temp of 145. Check after 1 hour.
Take out and tent with foil for 15 minutes.
Slice thick and eat up! We had it with salt potatos!
