    I was boiling a couple of chickens to make Atrains food and decided I was getting tired of chicken soup. So I figured to do everything the same to make the stock but instead of chicken I would make mini meatballs! The stock is like this -http://www.conservativeunderground.c...e-chicken-soup

    I used the regular veggies for chicken soup and added meatballs and spinach and made pasta stars.

    Meatballs:
    1 onion grated
    1/4 cup parsley
    2 eggs
    2 tsp minced garlic
    2 tsp kosher salt
    2 slices of white bread crust removed and torn into small pieces
    1 cup parmesan grated cheese
    1 lb lean ground beef
    1 lb ground pork
    fresh ground pepper

    Pre made chicken stock
    2 onions diced
    1 green bell pepper diced
    some celery and carrots diced

    1 pack frozen shredded spinach


    Blend all the ingredients in a large bowl, mix it up good, if its still a little wet add some breadcrumbs
    Scoop out a little less than a tablespoon of meat mixture and roll into little balls.
    I put the fresh veggies (for the chicken soup) Diced onion, green pepper, carrots and celery into the simmering broth, cook for 45 minutes.
    Add the meatballs to the simmering soup.
    When they start to float add the spinach and cook for about 10 more minutes and then eat up!

    My Grandmother made this kind of soup and it kicked ass, my dad makes it as well and its almost as good.

    That looks awesome, especially for this cold Florida weather. A- (1/2 point deducted for that parm. cheese in a jar)

    Awww c'mon! The last time you nailed me for store bought stock!

    Oh yeah, I guess this is a tip. Do not cook your pasta or noodles in the soup! the pasta will absorb to much broth. Cook it like the package says, strain then add to your soup.

    It's supposed to have the Italian national colors, RED (tomatoes), white (pasta) and green (spinach)! You need diced tomatoes.

    I had an authentic Italian recipe, but I lost it with the head crash - along with many other recipes. I think I printed a copy for the folks across the road a long time ago, so I'll see if Debby still has it.

    BTW, you make your own stock from a whole chicken cooked, deboned and diced. The meatballs should be browned before adding them to the soup. The pasta is orzo or ditalini cooked al dente.

    Italian wedding soup is the soup of all soups!!!!!!!!!!!!!!!
