I wanted something different so I invented a Fajita quesadilla!
What I used:
Some 10" tortillas
Some sharp shredded cheddar
Some shredded colby jack cheese
2 med onions
1 bell pepper
3 boneless skinless chicken breasts
Condiments: Guacamole, sour cream am\nd some corn and bean salsa
Cut any fat and crap off the chicken, pound it down to about 1/4".
Season with S&P and garlic powder
Use 1 TBS of oil over med high heat and cook cutlets about 4-5 minutes per side set aside and let rest.
Slice onions and bell pepper and dice the jalapeno.
In 1 TBS oil sautee the veggies about 10-12 minutes.
While that is cooking slice up your chicken.
In a non stick pan over med heat put a tortilla in it. Start assembling!
Put in chicken, both cheeses and some veggie mixture and top with another tortilla.
Let cook for 3 minutes, flip and cook for 3 more minutes, the cheese should be melted.
You might ask how I flipped that beast! Well I guess this is a tip!
I put a dinner plate over the fry pan and flipped it upside down holding the dinner plate, then slide it off the plate back into the pan!

I took a bad picture
