  1. #1 Sausage and salsa for a crowd!

    This can feed an army and its a very easy 1 pot meal for a crowd. You can scale this recipe down to just a few sausages and a bottle of Pace salsa, but I gotta go big! I get 12-15 people every Sunday for football and we eat alot!

    30 mixed brats and mild Italian sausages
    3 large bottles med. salsa
    2 large bottle hot picante
    diced peppers (yellow, red and orange)
    1 large can diced tomatos
    2 large onions diced
    10 cloves garlic minced
    2 cartons button mushrooms halved
    S & P to taste
    1/2 cup red wine

    In a large pot, put evry thing but the sausage and wine and simmer.

    Brown sausages in batches for 5 0r 6 minutes per side, about half way cooked, nice and brown outside but still red in the middle. As the next batch browns, cut up the browned sausage into bite sized pieces and add to the big pot.
    After browning is done, deglaze the pan with the wine until sludgy about 5-6 minutes and add to the big pot.
    Let that simmer for about 2.5 hours, uncovered, stirring often.

    We served with Italian bread and fusili pasta.
    And beer!:D

    Just kidding, I enjoy your recipes and pictures more than you could know. My Dad was an adventurous and wonderful cook. He would have been crazy about you.:)

    I saw canned tomatoes. I made chili recently and used fresh tomatoes because we had a ton of them. It was good chili, but it really was different in the way it tasted from when i cooked chili with canned tomatoes, which is what i usually use. The chili made with fresh tomatoes had a sweeter taste. Definitely different.

    I actually prefer the taste of chili made with canned tomatoes, which is what you used in your recipe.

    Just an observation.

    There are some pasta sauce recipes that definitely benefit from the quality of the taste of fresh tomatoes, but it really is different and is something to consider when putting together a recipe.

    BTW, your recipe looks delicious.

    I do my tomato sauce with canned crushed tomatos and some tomato paste and ground meat and onions and garli and peppers, the secret is to cook it down for hours! :D
